I'm certainly not going to rag you about overtraining. Off course, if you're doing 20-30 sets per body part I might.
You want to be careful with that elbow and not overdo it too soon. I'd build up slow and easy.
As far as diet, my wife and I have always advised having a cheat day. Just make sure that doesn't turn into a cheat weekend and then start dragging out into the week. After a while, your cheat day will probably turn into a cheat meal.
