The yolk of the egg is heavily oxygenated, and rich in other gasious elements. Then there is the second membrane holding the yolk in it's place. The gasious components to the yolk change phases as it heats producing heated gas which bursts through the membrane in a sudden expulsion of the heated gas.
Scrambling lessens this because the membraine is ruptured, but the gasses still need to be released....... Hope that helps
