Dessert Recipes
hey, EF! you gotta have fun sometimes! try these desserts... Almond Brownies Recipe
2/3 cup blanched whole almonds, toasted 1 (8 ozs) package semisweet baking chocolate 1/3 cup unsalted butter 1 1/4 cup whole-wheat
flour 1 cup brown sugar 2 tbsp amaretto 1 tsp baking powder 1/2 tsp salt 1/2 cup egg
substitute Almond frosting: 2 cups powdered
sugar 3 tbsp unsalted butter 1 tbsp amaretto 1 tbsp milk (can add more if needed for correct consistency)
- heat oven to 350 degrees - spray a 13"x9"x2" baking pan with non-stick cooking spray - place 1/3-cup almonds in food
processor or blender - cover & pulse-blend until almonds are ground - coarsely chop remaining 1/3-cup almonds & set aside - melt
chocolate & butter in a small saucepan over low heat, stirring frequently - remove from heat - stir in ground almonds & remaining ingredients -spread batter into
pan - bake for 20-25 minutes or until an inserted toothpick comes out clean - cool completely - prepare frosting & spread over
brownies - sprinkle with chopped almonds - cut into 3"x1" bars
Almond Frosting - mix all ingredients together until smooth & spread over cooled brownies before slicing Calories: 130; Total fat: 6
grams; Saturated fat: 3 grams; Cholesterol: 20 mg; Sodium: 70 mg; Carbohydrate: 19 grams; Protein: 2 grams; Dietary fibre: trace

Almond Biscotti Recipe
Almond Biscotti Recipe 1 cup sugar 1/2 cup butter, softened 1 tbsp
grated orange peel 2 eggs 3 1/2 cups whole-wheat flour 1 tsp baking powder 1/2 tsp salt 1/3 cup slivered
almonds, chopped - heat oven to 350 degrees - beat sugar, butter, orange peel & eggs in a large bowl - stir in flour, baking powder &
salt - stir in almonds - shape half of the dough at a time into a 10"x3" rectangle & place on an ungreased baking sheet - bake about 20 minutes or until an inserted toothpick comes
out clean - cool on baking sheet for 15 minutes - cut into 1/2" slices & place cut side down on baking sheet - bake about 15 minutes or until crisp & light
brown - cool on a wire rack Calories: 86; Total fat: 3 grams; Saturated fat: 1 gram; Cholesterol: 9 mg; Sodium: 65 mg; Carbohydrate: 13 grams; Protein: 2 grams;

Apple Cherry Granola Crisp 1 cup thawed frozen sweet dark cherries 3 green apples, sliced with seeds removed (peel if
desired) 2 tbsp cherry or apple juice 1 tbsp whole-wheat flour 1/2 cup brown sugar 1/2 tsp cinnamon
1 cup lowfat granola - preheat oven to 350 degrees - in medium bowl, mix cherries, apples &
juice - in separate small bowl, mix together flour, sugar & cinnamon - pour flour mixture over fruit & toss well to coat - arrange in 9"x9" baking dish sprayed with
cooking spray - top with granola - cover with foil & bake 30 minutes - uncover & continue baking another 15 minutes or until apples are tender & mixture is

Angel Food Cake Recipe
Angel Food Cake Recipe 1 cup cake flour 1 1/2 cups powdered sugar
1 1/2 cups egg whites (about 12) 1 1/2 tsp cream of tartar 1 cup sugar 1 1/2 tsp vanilla 1/2 tsp almond
extract 1/4 tsp salt - heat oven to 375 degrees - mix flour & powdered sugar - beat egg
whites & cream of tartar in large bowl on medium until foamy - beat in granulated sugar on high speed, 2 tbsp at a time, adding vanilla, almond extract & salt with the last of the sugar - continue beating until a meringue holds stiff peaks - don't
underbeat - sprinkle flour & sugar mixture, 1/4 cup at a time over meringue, folding gently just until mixture disappears - spread in an ungreased tube pan by gently cutting into batter with a
spatula - bake 30-35 minutes or until top springs back when lightly touched -remove from oven & immediately invert pan onto a heatproof funnel or a small-mouthed bottle - let cake hang upside down until
completely cool Calories: 130; Total fat: trace; Saturated fat: trace; Cholesterol: 0mg; Sodium: 71mg; Carbohydrate: 30g; Protein: 3g; Dietary fibre: trace

Chocolate Cake with Raspberries
Chocolate Cake with Raspberries 2/3 cup whole wheat flour 1 cup all-purpose flour
1/4 cup cocoa 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1 egg
1 cup maple syrup 1/4 cup canola oil 1/2 cup unsweetened applesauce Cooking spray fresh raspberries
1 tbsp powdered sugar (optional) - preheat oven to 350 degrees - in medium bowl, mix together dry
ingredients - in separate bowl, whip egg with syrup, oil & applesauce - then add to dry ingredients - beat well to blend - pour batter into
8"x8" baking pan sprayed with cooking spray - bake about 40 minutes or until toothpick inserted in centre comes out clean - cool in pan - invert onto cake
platter - serve slices with fresh raspberries - if desired, dust top of cake with powdered sugar

Chocolate Marbled Cheesecake Recipe
Chocolate Marbled Cheesecake Recipe 4 cups plain nonfat yogurt 4 chocolate wafers,
crushed 1 (8 ozs) package reduced-fat cream cheese 2/3 cup sugar 1/4 cup skim milk 2 tbsp all-purpose
flour 2 tsp vanilla 3 egg whites 1 tbsp cocoa 1 tsp chocolate extract
- place a paper coffee filter in a small strainer & place over a bowl - spoon yogurt into paper-lined strainer & place in refrigerator at least 12 hours - discard liquid
occasionally - heat oven to 300 degrees - spray a 9"x3" springform pan with non-stick cooking spray - sprinkle chocolate wafer crumbs
into bottom of springform pan - combine the drained yogurt & cream cheese together in a medium bowl - beat on medium setting using an electric mixer until blended - add sugar, milk, flour, vanilla
& egg whites - continue to beat until well mixed - place 1 cup into a small mixing bowl & beat in the cocoa & chocolate extract until well mixed - carefully spread vanilla batter over
chocolate crumbs - drop chocolate batter by spoonfuls onto vanilla batter - swirl through batters with a metal spatula for marbled effect - be careful not to touch the bottom of the
pan - bake 1 hour - turn off oven & leave cheesecake in the oven for 30 minutes - remove & cool for 15
minutes - cover & refrigerate at least 3 hours - can also be served with fresh fruit of heated fruit preserves
makes 12 servings; serving - 1 slice Calories: 200; Total fat: 4g; Saturated fat: 2g; Cholesterol: 16g; Sodium: 283mg; Carbohydrate: 28g; Protein: 13g; Dietary fibre: trace

Keylime Cheesecake
Keylime Cheesecake 3/4 cup graham cracker crumbs 3 tbsp unsalted butter,

cup sugar 1 1/2 cups low-fat cottage cheese 1/2 cup nonfat cream cheese - combine graham cracker crumbs, butter & 2 tbsp sugar & mix
well - press mixture evenly into bottom of a 9" springform or 9" round cake pan - bake at 350 degrees for 8 minutes - cool completely
- line a large colander with cheesecloth or thin linen cloth - allow cloth to hang over outside of colander - stir yogourt until smooth, then pour into center of the
colander - fold edges of cloth over yogourt, place colander in a large bowl & refrigerate at least 8 hours to drain excess liquid - remove yogourt from cloth & set aside
optional step for draining yogourt: - place a paper coffee filter in a small strainer & place over a bowl - spoon yogurt into paper-lined strainer & place in refrigerator at least 12
hours - discard liquid occasionally - sprinkle gelatin over lime juice in a small non-aluminum saucepan & let stand for a minute - add 3/4-cup
sugar to juice & cook over low heat, stirring constantly until gelatin & sugar dissolves - remove from heat & cool - add cottage cheese, cream cheese & gelatin mixture
in a food processor or blender - process just until smooth - add yogurt and process a few more minutes to mix - pour mixture onto prepared crust, cover & chill at least 8
hours - garnish with lime rind curls if desired - cut into slices & serve makes 10-12
servings; serving - 1 slice Calories: 198; Total fat: 2g; Saturated fat: trace; Cholesterol: 3mg; Sodium: 282mg; Carbohydrate: 34g; Protein: 9g; Dietary fibre: trace

& gradually beat in honey using an electric mixer until it becomes a light & fluffy creamed mixture - add egg a little at a time, beating continuously - combine carrots, raisins, nuts, orange juice & vanilla in a medium
bowl - combine dry ingredients in a large bowl - gradually alternate adding dry ingredients & carrot mixture to creamed mixture - pour batter into a 13"x9"x2" pan
sprayed with non-stick cooking spray - bake at 350 degrees for 35-45 minutes or until an inserted toothpick comes out clean makes 12 servings; serving - 1

bowl - spoon yogourt into strainer, cover & refrigerate for 12 hours - drain liquid from bowl occasionally - heat oven to 300
degrees - spray a 9" springform cheesecake pan with nonstick cooking spray - sprinkle crushed cookies into bottom of pan - beat yogourt & cream cheese in a medium bowl with an electric
mixer - add sugar, milk, flour, vanilla & eggs - continue to mix on medium speed until smooth for about 2 minutes - carefully spread cheese & yogourt mixture over cookie crumbs in
pan - bake 1 hour, turn off oven & leave cheesecake in oven to cool for 30 minutes - remove from oven & cool for 15 minutes - top with
fruit topping (fruit with sugar & a little cornstarch to thicken) - refrigerate or top with fresh fruit prior to serving - cheesecake should be refrigerated for at least 3 hours prior to serving
(with or without fruit topping) - before serving, run a metal spatula along inside of springform pan to loosen, then remove the side of the pan makes 12
servings; serving - 1 slice Calories: 196; Total fat: 5g; Saturated fat: 3g; Cholesterol: 16mg; Sodium: 162mg; Carbohydrate: 31g; Protein: 8g; Dietary fibre: 1g

Chocolate Brownies
Chocolate Brownies 1/3 cup pitted prunes 1/3 cup hot water 1 1/4
cups unbleached flour 1 tsp baking powder ½ tsp salt 1¼ cups sugar ½ cup packed brown
sugar ¼ cup crushed walnuts ½ cup semi-sweet chocolate chips, melted. ½ cup unsweetened cocoa powder 4 egg
whites 1 tbsp olive oil 1 tbsp vanilla extract - place prunes & hot water in a blender or food
processor - soak for 5 minutes or until plump - process into a paste & set aside - preheat oven to 350
degrees - coat an 8"x8" baking dish with non-stick spray & sprinkle lightly with flour - in medium bowl, combine the flour, baking powder & salt, and set aside
- in large bowl, combine sugar, brown sugar, melted chocolate, cocoa powder, egg whites, oil & vanilla - mix until smooth using an electric mixer or a spoon - add prune puree & mix
well - add flour mixture to the chocolate mixture & beat until well combined - pour batter into the prepared baking dish - bake for 45-50 minutes, or
until a toothpick inserted into centre comes out moist but not wet - cool on wire rack for 1 hour before cutting into pieces. makes 16 servings: serving - 1
piece Calories: 169; Total Fat: 3g; Saturated fat: 1g; Cholesterol: 0mg; Sodium: 115mg; Carbohydrate: 36g; Protein: 3g; Dietary Fibre: 1g

Banana Cream Pie
for Unkl... Banana Cream
Pie (makes 8 servings) 3/4 cup white sugar 1/3 cup all-purpose flour 1/4
tsp salt 2 cups 1% milk 3 egg yolks (beaten) 2 tbsp unsalted butter 1 1/4 tsp vanilla extract
1 9" pie crust, pre-baked (preferably graham cracker crust) 4 bananas, sliced - in a saucepan, combine the sugar, flour & salt
- add milk in gradually while stirring gently - cook over medium heat, stirring constantly, until the mixture is bubbly - keep stirring and cook for about 2 more minutes - remove from the
burner - stir a small quantity of the hot mixture into the beaten egg yolks - and immediately add egg yolk mixture to the rest of the hot mixture - cook for 2
more minutes; remember to keep stirring - remove the mixture from the stove, and add butter and vanilla - stir until the whole thing has a smooth consistency -
slice bananas into the cooled baked pastry shell - top with pudding mixture - bake at 350 degrees F (175 degrees C) for 12 to 15 minutes - chill for an hour (the pie in the fridge... not
you...) Calories: 307; Total Fat: 11.5g; Cholesterol: 92mg; Sodium: 238mg; Total Carbs: 47.5g; Dietary Fibre: 1.7g; Protein: 4.9g

Simply Simple Whipped Cream
Simply Simple Whipped Cream (makes 16 servings) 1 cup heavy cream
1 tsp vanilla extract 1 tbsp confectioners' sugar - in a large bowl, whip cream until stiff peaks are just about to
form - beat in vanilla & sugar until peaks form - make sure not to over-beat, or else cream will then become lumpy & butter-like
note: for best results make sure whisk and bowl are ice cold Calories: 54; Total Fat: 5.5g; Cholesterol: 20mg; Sodium: 6mg; Total Carbs: 0.9g; Dietary Fibre: 0g; Protein: 0.3g
