No, I would not be worried about getting too much cholesterol from turkey, ground beef, and chicken breasts. Those are actually pretty lean meats, and are healthy for you. As long as you're not eating the skin, and cooking them yourself rather than getting them from KFC, McDonald's, ect.
However, if those three meats are all that your diet consists of, you might want to mix it up with some other sources. It's best to eat a well-balanced diet full of variety of foods, so that you make sure you get all the different types of nutrients you need.
Soy is ok. I prefer to not eat soy, but it does have benefits. I think soy only becomes a problem when you begin to eat too much of it. If you eat just a little, then you shouldn't have anything to worry about.
