The ideal c/f/p ratios are going to vary according to your needs. Immediately post workout, you need 8g of fast (usually whey) protein, and 24g simple carbs (you could have more so long as you maintain the 3:1 ratio, but it's really not worth it, unless you're trying to gain mass at all costs). If you're using them as part of one of those crazy Atkins-style diets, then you're looking for a zero carb bar, and the list goes on and on.
I used to be a bar fan, but stopped eating them when I realized that the self-stable fats and preservatives were working against my ideal diet (though it shouldn't really stop you). I loved the convenience, but I've switched to eating more cold chicken or beef jerky.
Can't give you any other advice.
