I bought some boneless chicken breasts and had the butcher at my local store grind it for me. I make taco salads out of it and use it for tacos.
My Taco salad is
Ground Chicken
lots of lettuce
A few olives
Some low of fat free sour cream with a little taco seasoning mixed in.
A few Tostitos light of baked otstitos.. Just a couple for some crunch.
Mix it all together so you get a very light coating of the sour cream mix all over the salad and cover with your favorite taco sauce. I eat this a lot after I work out. It has some protein and a few carbs and a little bit of fat.
