Default Salmon Scramble!!!

One of the things I really enjoy is breakfast. Especially saturday morning breakfast with my girlfriend. We generally take turns cooking and this morning as the fridge was opened we realised that alot of the "breakfast" food had been depleted. Only 2 eggs. not wanting to go with all the carbs that cereals provide, I set into the freezer and found a couple of pre-packaged salmon filets. The subsequent conconction turned out great so here it is.

Ingredients:

2 salmon filets
1/2 stalk celery-chopped
1/4 red bell pepper
1/4 green bell pepper
1 slice (1/4") red onion-chopped
2 heaping tablespoons Feta cheese.
1 tablesppon sour cream
olive oil
garlic salt (Lowreys with parsley is the best)
celery salt
Trader joes 21 seasoning salute
oregano

Drizzle olice oil in pan and pre-heat over medium heat.
Chop salmon into bite-sized pieces and add to pan along with the celery.
Add seasonings to taste, this way they infuse with the olive oil.
When salmon is halfway cooked, add the rest of the veggies, and stir.
When this mixture is almost done, add two wisked eggs and the the feta cheese and scramble.

I served this up with small slices of rye toast with smart balance spread. It served both of us with enough left over for another serving.

This was really good, protien rich, good fats, low carb, and low glycemic. Added up to a home run!
