Levanah's Fiesta Chicken Bake!!!
The future Mrs Bouncer and I like to cook, and she's amazing at it. I came home recently with a great buy on chicken breast tenders. 10 pounds to be exact. Alot of us eat chicken. It's a weight training staple. However it can get boring at times eating the same thing. My sweetie felt inspired this evening, so I got the hell out of the way and the following was amazing. Great macros, great taste, high protein. little fat, and complex carbs all in one casserole. \
Cover bottom of casserole dish with chicken tenders.
drizzle with EVOO
Add 1 1/2 cup roasted southwestern corn ( we buy it frozen at Trader Joes)
I can of Black beans
Red, yellow and green peppers, equal amounts, 1 cup.
1/4 tsp cayenne pepper
2 tsp chili powder
1 tsp cumin
1 tsp turmeric
few dashes of red jalepeno sause
Sea Salt and Fresh Cracked pepper to taste
Mix up and spread chicken and mixture back out evenly across the pan. Bake 375 20-25 min-until chicken is cooked through.
Options: 1) After removing from oven, Slice 2-4 corn tortillas, pour off a little juice from casserole into a bowl to soak the slices and put it all back into the casserole and bake for another 5 min.
2)After removing from oven, top with cheese if desired and bake another 5 min.
We had this with wild brown rice. I nearly had to arm wrestle my 10 year old boy for seconds. Serves six.

Sounds good! Thank the future Mrs. Bouncer for me. One question though: should I have a fire extinquisher handy? It sounds spicy.

Actually, the way we made it wasn't hot, but had lots of flavor. 2 tsp of cayenne for the whole dish and just a few dashes of mild jalapeno sauce. My 8 year old gobbled it down and he can't stand the hot stuff yet. When we have curry dishes we cut his with greek yogurt to reduce the heat. However....it would be pretty easy to kick it up to flame thrower status by adding more cayenne!
