What to do with cayenne peppers?
So my wife and I decided to help our local farmers out and visit one of the farmers markets here in Fairfax.... Ya... we're definitely doing that again, and as much as possible while the still in season. Great deals on fresh foods and IMO the deal of the day was an overflowing pint container of fresh/deep red cayenne peppers for $2.50. Not even sure what we can do with them other than hanging them to dry out. I'm gonna do some Google searching later this weekend but I'm guessing some ppl here have some good recipes or ideas on what we could do with em.
So anything tasty?

Russ use them to make pickles. Cut up carrots a few onions and baby cukes, make your favorite brine and add a few of those beauties. Or, Heres an idea that tastes great and is healthy. Adjust the cayenne in the recipe to your tolerance for heat!!! Enjoy
Wortel Sambal
(South African Carrot Salad)
1 # Carrots, peeled
½ t Cardamom
¼ t Cayenne pepper
1 T Ginger, minced
1 clove Garlic, chopped
1 t Salt
1 ½ cups Sugar
½ cup Water
¾ cup White vinegar
shred the carrots onto food grade towels and reserve.
In a large saucepan, combine all remaining ingredients and bring to a boil. Reduce heat and simmer for 30 minutes. Remove from stove and let stand until room temperature. Add carrots to the broth, cover and chill.

A1, could you use splenda or stevia instead of sugar w/ this recipe?

Yes, both would be fine. I'm not sure if the amount should be tweeked. I would start using a little less if your using the stevia. I have tried some recipes with the splenda and they seem to turn out a little flat, so if your using the splenda maybe an extra pinch or two...
