Default Our New Low Carb Recipe

Sometimes it's fun just to see what you have in the fridge and cabinets and get creative. I've been on less than 60 grams a day of carbs for 6 weeks this time. Whatever experimentation has to fit in that guideline.

You will need:

1 pretty flat chicken breast fillet.
2 tablespoons of herb crusted goat cheese.
1 slice of lean ham
2 slices of tomato
1/8 cup of fresh or frozen spinach ( not the canned variety.)

I have a nice grill pan that puts grill marks on the food, but this could be done over a grill fire or coals.

Cook chicken breast w/ olive oil cooking spray, season with garlic salt, and a little cracked pepper.
Cook the ham through but leave tender.

With the meat fresh off the fire...

Lay the ham slice down, spread the goat cheese over it.
Sprinkle the spinach over the goat cheese.
Apply the 2 tomato slices like you would a sandwich over the spinach.
Top with the chicken breast.

The result is a stack of great flavors that made me forget about dieting! Grab a knife and fork and enjoy with a green salad.

Mmmmm, this sounds like an awesome recipe!! Would you by chance know the macro breakdown of this one? (Yes I AM too lazy to figure it for myself, lol!)

I inserted 6 ounces as the size of the breast and 1 ounce for a thin slice of ham, pretty standard....
