...to make at home for family.

--

A little bit of background - grandfather is very much a "meat, potatoes, vegetables" type of person, whereas my grandmother has no set schedule, and will eat anything she wants throughout the day.

Congestive Heart Failure, a shocking back to proper rhythm, a stroke, and uncontrolled nosebleeds later, and I finally have "no fats, no salt, no sugar, and low cholesterol" from the nurses about my grandmother...

Now, considering I know the "dead food is dead (processed food gives you, relatively nothing), and my grandfather is going "well... what the hell are we going to cook"... thought I'd pop on here and ask for help in restocking the house.

Grilled chicken is a great staple food and you can really do a lot with it. You can make a grilled chicken salad and spice it up with tomatoes, carrots, and even some low fat goat cheese. If you dont have one yet, you should invest in a George Foreman grill. It makes cooking so much easier, and you throw a grilled chicken breast on there in no time.

Best of luck!

Poaching is a great cooking method for a variety of meats (fish, poultry even beef and pork), use low sodium broths while poaching.
Parchment paper is another great way to cook without using fats as well.....is he allowed healthy fats though? The omega's and such? If his food is that restrictive ask the nurses to set you/him up with a nutritionist who can offer menus and shoppiong lists......it's covered by the Civic Hospital Heart Institute is it not? Should be part of his treatment plan nonetheless......look into it.

It's actually my grandmother that I'm doing the research for, and she's at the mont-fort out in the east end, but I shall keep inquiring places, and trying to see if there's a dietitian / nutritionist on staff there.
