snappy and quick little chicken
Been awhile since I have added a recipe so here is a quick scallopini of chicken tuscan style...
1 each 4 oz chicken breast sliced into thin flat pieces
8 ea artichoke 1/4’s
1 ounce julienne tomatoes
1 ounce chopped spinach
½ ounce capers
1 ounce white wine
½ ounce lemon juice
¼ tsp minced garlic
salt & pepper to taste
½ tsp chopped parsley (fresh is best, dry will work)
1 tsp olive oil
Heat the olive oil in a saute pan. Sear the chicken escallops on both sides; the chicken should have a brown color at the edges. Remove the chicken to a baking dish and finish in a 300 degree oven while adding the artichokes, tomatoes, capers and spinach to the hot sauté pan. Add garlic and de-glaze with white wine and lemon juice then finish with garlic and parsley. remove chicken from oven and cover with veggies and sauce.
