Slammin' Salmon Frittata
Every so often, I like to post something I/we have cooked up that was really tasty. This morning was a salmon fritatta. Mind you, I'm having fun with frittatas these days.
Lightly cook (poach, grill....) 4 0z salmon and then cut into chunks.
Cut into nice chunks red and yellow peppers (about 1/4 of the peppers each)
1 slice red onion -diced
1 low fat mozzarella stick sliced across thinly
fry until crispy one slice bacon while doing the other prep. then chop and use a paper towel to dab all the grease.
Wisk 6 eggs
Put all the ingredients-less the eggs and cheese- in the pan and start coking. Add fresh cracked pepper, sea salt and red pepper flakes to taste. Spread the mixture out evenly across the pan. Cook for about a minute, then add eggs. Cook like this for two minutes on med high heat then top with the cheese slices and transfer to a pre-heated 350 degree oven. Cook until when you shake the pan (I can hear A1 laughing right now) the frittata doesn't jiggle. Make 4 servings, of which across breakfast and lunch I've ha 3/4 of them.
I like to put a teaspoon of mayo and a 1/2 teaspoon of horseradish on for more flavor.
