The problem would be that you will need to get the emulsion to "set" so you will either have to heat the shake until it is boiling and then add the thickener, and then chill it. that gives you the best chance for it to set up but it may change the flavor.
You might try Guar Gum. If you go online you can find institutional foos service vendors that will carry it, It is something we use to thicken sdressings and such in a chilled state. If the Gun works you don't need to heat your mix, you will need to experiment on the exact quantity to add to get the necessary stability for a pudding....
