Mac n cheese, broc n cheese, tuna melts.....
so I am about 12 weeks out from contest, trying to buck up. I was craving some pasta tonight and needed to get some protein in, keep pasta portion low, NOT USE CHEESE OR CREAM which is what I am craving and also add some greens............now like many of you I like the creamy taste of tuna melts or mac n cheese or broc n cheese but if you are trying to lean then cheese is not on the menu.
so I used a 1/2 cup cooked portion of small spelt pasta shells, a can of tuna, a cup of broc florets and about 1/2 cup of no fat plain yogurt, a tbs of grainy mustard, some ms dash table version, pink salt and a sprinkle of cheyenne and a tbs of evoo - mix.
I rewarmed it a bit in the nuker for a few seconds - the yogurts cools it, and it was delicious, just like a creamy version of those dishes above but all in one and diet friendly - at least at 12 weeks out, and for those not competing.
Try it and let me know if any of you liked it. You could always add a tbs or 2 of non fat mozza or jack shredded or even white cheddar - whatever you like.- to add a small cheese bite without too much change in the nutritional numbers.
Hmm I guess you can also add some chopped avacado for creaminess instead of the evoo.......and you can eat it cold too.......I was going to put it on top of some spinach.......many ideas.
Linda
